Well, we had it easy last week, but this week we have meetings. Every night. So, we’ll see how successful I am pulling dinner together on a nightly basis. Here’s the plan. . .

M Chicken Gyros and Andy has a BOE meeting

T Eggplant Parmesan and Spaghetti, then off to curriculum night at Oakwood

W Seared Scallops with Farmers Market Salad (the blue box for the boys), then Andy has a committee meeting

Th Black Bean and Corn Soup with Tortilla Chips and Cheese (squeezed between soccer and Cub Scouts)

F Tex Mex Pizza, following a late afternoon birthday party for Ben (no school today)

S Grilled Chicken with Roasted Beet Salad (Andy’s last meal)

S leftover night

(all the recipes except Monday’s are from the September Cooking Light–what a yummy issue!)

Andy leaves for India Sunday, so the little boys and I will be on our own for dinner. Next week will be very kid-centered with me probably eating a lot of sandwiches and salad for dinner while Andy’s gone. Maybe I’ll sneak in another sushi night, too!
