Tuesday: Minestrone Soup with Cheese Toasts
Wednesday: Slow Cooker Asian Shredded Pork with Stir-fried veggies and Rice (BOE Candidate Forum)
Thursday: Mac and  Cheese, Roasted Broccoli and Salad (Parent-Teacher Conferences tonight)
Friday: Sausage Calzones and movie night
Saturday: leftovers
Sunday: Chicken Parmesan with Spaghetti and Garlic Bread

No recipes this week since these are all wing-it style for me. Sorry.

We have had a couple little sickies around here lately. They both were alternately listless and crabby over the weekend. Will has perked up, but Ben is on Day 2 of no school. Yesterday he spiked a fever of 103 and lost his voice. Things are looking up this morning, so I am REALLY hoping we’ll be back to normal tomorrow. Here’s what’s on the menu:

Monday Meatloaf, Baked Potatoes, Roasted Broccoli (I caved and made PB&J sandwiches for the kids. Apparently Ben no longer likes meatloaf or sloppy joes)
Tuesday Escarole and Sausage Soup with Bread and Salad (yes, I’m pretty sure the kids will have bread and salad for dinner, but maybe they’ll surprise me)
Wednesday Make Your Own Tostadas (because this always makes everyone happy)
Thursday Crispy Breaded Shrimp and Beans (this never happened last week)
Friday Make a Pizza Night + salad
Saturday Leftovers and a babysitter for the kiddos (we are going to the LHS Jazz Band Dinner Dance–Fancy!)
Sunday Pasta Milano with Salad and Breadsticks

By the way, that last link is a little hint to my new discovery I will share later this week!

What are you eating this week???

I realized I missed last week. The Blizzard of 2011 edition featured a random clear-the-pantry selection of dinners. Nothing planned and nothing post-worthy. Now with space in my cabinets and fridge, we are back on track:

Monday: Mac and Cheese (mushrooms and spinach added to Mom and Dad’s share) Meetings for both of us tonight, so dinner time will be scattered

Tuesday: Sloppy Joes and relish tray,  Candidate interview for Andy, then Cub Scouts for Ben and Andy

Wednesday: Make your own black bean tostadas–the favorite lately (and everyone’s home tonight!)

Thursday: Chicken Tetrazzini and Salad

Friday: Pizza and Movie night (I have book club)

Saturday: Minestrone Soup and Bread (play at the High School)

Sunday: Leftovers

Registration for summer baseball starts Saturday–can’t wait for those sunny days spent on the field! Meanwhile, it looks like all the slush is going to freeze the next couple days with barely two-digit temps.

Andy is back in India, so it’s just me and the kids for a few more days. Lucky for them, that means I cook their favorites for dinner!

M: Pumpkin Soup with Cheese Toasts (it’s really butternut squash, but don’t tell them!)

T: Black Bean Tacos with Guacamole and chips

W: Chicken nuggets and Applesauce (Mom is going out!)

Th: Chicken Tetrazzini and Salad (Andy comes home!)

F: Order pizza (I get to eat LeeAnn’s spinach lasagna at Christmas  Card Night! Yum!)

S: Slow cooker Italian Beef sandwiches and Relish Tray

S: Orzo Stuffed Peppers with  Chicken Sausage

I have a scheduled check up with my surgeon this week. One year ago this week I had my first surgery. Hard to believe! I am looking forward to enjoying this December MUCH more! I do feel less organized, though. The events of last November really lit a fire under me and by this time last year I had Will’s birthday plans and all my Christmas shopping under my belt. I’m still not sure how I did that. I think the Internet might have been involved.

We took Andy back to the airport Saturday, then stopped at the oasis for a treat. The kids just think that is the coolest thing! Easy-peasy kid-friendly dinners are on the docket for this week without Andy.

Today's harvest

We are back to “normal” after our staycation week. Boy was that exhausting. I just finished editing the photos and will post more on that soon.

Meanwhile, it’s tomato season at the Taylor house, so they will be featured prominently during breakfast, lunch and dinner the next few weeks.

Monday: Roasted Tomato and Goat Cheese Pasta with Squash Blossom Fritters

Tuesday: BBQ Beef Brisket (Ben’s new favorite!) with Veggies and Dip

Wednesday: Artichoke Pasta Salad

Thursday: Grilled Shrimp with Watermelon Salsa

Friday: Grilled Mexican Pizzas

Saturday: Andy’s HS Reunion (25!!)

Sunday: Braden’s Birthday Party (1!)

. . . and next week we will be enjoying lots of sliced tomatoes with roasted sweet corn since Andy’s HS Reunion coincides with the Mendota Sweet Corn Fest!

We had a packed weekend. Friday we all took part in the Relay for Life, raising funds for the American Cancer Society. The LJWC enters a team every year, and this year I walked as a survivor. Surreal. This is a real family event, and all our team members brought their families this year, so it was one big playdate! We tried to stay all night this time, but Ben woke up around 1:30 am and couldn’t get back to sleep, so we packed up and headed to our comfy beds. Somehow we managed not to take any pictures,  but rest assured it was a fun evening.

Saturday morning started with Will’s tee-ball game. 10:30 am sure rolls around early when you’ve been out til 1:30 the night before! But, we managed to show up for half the game, and we had another beautiful day for it.

After a much needed break, we headed to the Lemont Heritage Fest for the afternoon. We caught some live music (go Sara!), the boys cooled off with (very colorful) snowcones:

I bit the  bullet this year and let them try the crazy Euro Bungee jumper thing:

Then we hit the facepainting table:

Sunday involved another tee-ball game (did I mention we’ve been rained out a lot this year?), and that was about all the excitement we could handle.

Back to reality, here’s what we’ll be having for dinner this week:

M: Canneloni and salad (didn’t make it Saturday since we ate at the Fest)

T: Baja Shrimp Tacos with black bean salad

W: Fried egg and sausage melts with fruit salad

Th: Chicken Lettuce Wraps with rice

F: Make your own pizza and movie night!

S: Beef Empanadas and Spanish rice

S: Sesame Noodles with pineapple

I have been trying the last year to be more diligent about planning meals and sticking to the plan. To further that effort, and to encourage your own efforts, I will post my plan for the week here every Monday. Here is the agenda for this week:

Monday: leftover Chicken Parmesan and a roasted pepper salad

Tuesday: Potsticker Stir Fry with rice

Wednesday: Date night with Andy (kids are going to grandma’s for a sleepover!)

Thursday: Sour Cream Enchiladas and Mexican rice

Friday: pizza night and Relay for Life

Saturday: Cannelloni and green salad

Sunday: Hamburgers, fries and corn on the cob on the grill

Monday is usually a leftover night, then I go shopping on Tuesday. Used to be because Will was in school, and in the summer I shop on Tuesday because that is when our local Farmer’s Market is open. I might have to change my plan this fall.

Okay, I’m trying to figure out a few tricks before I “go public.” I think I finally figured out how to send you to create a banana split with Kelly Ripa. It’s fun, takes a minute, and every day you can make one and Electolux will donate $1 to ovarian cancer research. Cool, huh? Except that it keeps making me want to go out and get a real one!
